Thai Red Curry “Hummus”


Wanting some hummus with a bit of a kick, I decided to experiment with Thai red curry and a can of bean medley.


First, I drained and blended the beans with two cloves of garlic (crushed), juice from half a lemon and s&p.
Then I pan-fried two tbsp of the curry paste with 1 tbsp of grapeseed oil (in order to bring out the flavor.


Lastly, I spooned in half of the blended bean mixture into the curry and fried till dry


The red curry has a lovely lemongrass flavor and the beans were a good vessel for the flavor. This went great with both crackers and snap peas ^^
